Traditionally, wine is stored in cellars which are underground, keeping the temperature constant. This is a modern building and to retain the same conditions as underground cellars, Colt installed chilling cubes during construction. A Colt CCS 2000 control system is linked to pumps that permanently circulate water from a well, and Solarfin louvre has been installed to prevent sunlight and heat entering the wine tasting area.
